Coconut pancakes

Coconut pancakes are one of our favourite breakfast choices. They are so easy to make, yet give you the most delicious pancakes. The coconut brings a refreshing taste making this treat perfect for a Sunday brunch!

Ingredients
150g wholewheat/ all-purpose flour
3tbsp sugar
1tsp baking powder
1/2 tsp baking soda
A pinch of salt
1 egg
100ml yogurt/curd
100ml coconut water
50ml coconut milk/cream
Coconut oil for cooking
Prep time: 15 minutes
Cooking time: 2 minutes
Makes: 8-10 pancakes
Procedure
Mix all the dry ingredients ( flour, sugar, baking powder, baking soda, and salt) in a large mixing bowl.
Mix the coconut water and yogurt and add this mixture slowly to the dry ingredient in thirds. Mix well.
Pour in the coconut milk/cream and egg. Continue mixing till fully incorporated.
Keep a pan on low heat and grease it with coconut oil.
Pour a ladleful of batter onto the pan.
When you start seeing pores form on the surface of the pancake, it is ready to be flipped. This usually takes about 30 seconds to a minute
Flip the pancake and let it cook for another minute.
Take it off the heat and serve. You can have it with maple syrup, Nutella, powdered sugar, coconut shavings, or even just plain.
