Is there anything better than a chocolate chip cookie with a tall glass of milk? I think not. This recipe will give you the perfect cookies- crispy on the outside, chewy on the inside with pools of chocolate!
Ingredients
1 1/4 cup of flour (you can also use whole wheat flour/ oat flour)
1/2 cup sugar
3/4 cup light brown sugar
1/2 melted butter
1 egg
1 tsp vanilla essence
1/2 tsp baking soda
1 tsp salt
1 bar/ 100g of semisweet/dark chocolate
Makes: 12-16 cookies
Prep time: 1hr 20 minutes/ 20 minutes (if you do not put the cookies in the fridge for an hour)
Cooking time:12-15 minutes
Procedure
Mix the two sugars and butter in a bowl and whisk until smooth.
Add the egg and vanilla essence and continue whisking till smooth.
Sift in the flour, baking soda, and salt and gently fold them in using a spatula.
Cut up the chocolate into small pieces using a serrated knife.
Fold in the chocolate until it is evenly spread through the whole dough.
Put this in the fridge to chill for an hour for the best flavor, but you can bake them right away if you want. (For baking right away you will need to preheat your oven to 180*C at least ten minutes in advance.)
After taking the dough out of the fridge, preheat your oven to 180*C.
Scoop out little balls of dough and put them on a baking tray lined with greaseproof/ baking paper. I recommend putting only 6 on each tray because they spread quite a bit.
Bake for about 12-15 minutes.
Once they are out of the oven the cookies HAVE to be left to cool for at least 10 minutes so that they can harden a bit.
Enjoy with a glass of milk!
